Yep, coffee is a fruit! It will take approximately 3 to 4 years for a newly planted Coffea tree to bear the 'coffee cherry' which turns a bright, deep red when it is ripe and ready to be harvested

Once the coffee has been picked, processing must begin as quickly as possible to preserve the fruit. There are two methods - dry or wet - used depending on location and resources. After drying, milled seeds are known as 'green coffee'.
Roasting transforms green coffee into aromatic brown "beans" by unlocking in the caffeol - a fragrant oil - inside resulting in the flavor and notes in the coffee we drink. Once roasted, enjoy the coffee as soon as possible.
