Depending on the variety, it will take approximately 3 to 4 years for the newly planted coffee trees to bear fruit. The fruit, called the coffee cherry, turns a bright, deep red when it is ripe and ready to be harvested - typically by hand.
Once the coffee has been picked, processing must begin as quickly as possible to preserve the fruit. There are two methods - dry or wet - used depending on location and resources. After drying, milled beans are known as 'green coffee'.
Roasting transforms green coffee into aromatic brown beans by unlocking in the caffeol - a fragrant oil - inside resulting in the flavor and notes in the coffee we drink. Once roasted, enjoy the coffee as soon as possible.
